
Gourmet fare has taken the country by storm and Fiordland is no exception. Some local recipes are so highly sought after that they have to be closely guarded.
The recipe for Fiordland's roasted sandfly originated at Martins Bay on the Hollyford track — or so the story goes...
However, the only way to find out more about this rare delicacy is to hike the Hollyford Track and spend the last night at accommodation on a wild south-western beach.
There are plenty of other reasons to hike the Hollyford Track — great food every night, comfortable lodges, jet boating down the river to avoid the more infamous parts of the track such as the Devil's Trail, and fantastic views of Lake McKerrow.
Of course, you'll need to do some walking to find out more about the roasted sandfly. But what we can tell you is that it's not on the menu every night, but the recipe is up on the wall for all to see.
